Lalvin RC 212 Bourgevin is a low-foaming moderate-speed fermenting wine yeast from the Burgundy Region with an optimum fermentation temperature ranging from 59 deg F to 86 deg F. Sufficient for 6 gallons of juice. Alcohol tolerance up to 14%. Recommended for hearty Reds also lighter Reds where color stability is a factor. Produces Pinot noirs with good structure, ripe berry, bright fruit and spicy characteristics.
